I am looking for a site or sites that features the following:
AHL Game recaps
AHL Game Stats
NHl Game recaps
For clarity, a recap is a written documentation of the game start to finish with details in sentences about who scored, when, assisted by usually described in more detail than a box score which simply lists when a goal happened, who scored it, assisted, and such.
I have looked at Hockey Reference which does have BOX SCORES, but no recaps. NHL.com has game recaps going back a few years, but nothing from the early 2000's, 1990's.
Statscrew.com is an excellent site for researching in detail the more extensive stats of minor league play that include Power play goals, shorties, and shooting percentage/shots. They do the big five of sports (Football, hockey, baseball, soccer, and basketball).
However, short of going to a library and taking the hours and hours to deep dive into old newspapers, is there not a site on the internet that holds the game recaps/stats for AHL games from the 90's until now. And whatever happened to the game recaps online that I saw in college in the mid 90's? There has to be something? Any help is appreciated.

For the AHL, https://theahl.com has a decent set of game logs and stats. To get started, select your team from Season/Team/Month from https://theahl.com/stats/schedule

I tried your way and was unable to find anything beyond the AHL All Star game from the years I was looking for. Might there be another option as this did not provide me with anything and the Stats seems to disappear prior to year of 2004.

Newspapers.com subscription, or check your local library to see if they have free online newspaper archive resources available.
